happy birthday to leon :]


my first MM-fondant cake :] yayyyyyyy! so exciting! i had been deciding for weeks what to do for my first cake order =O it came to this result!!

it literally took me 2days to do .. was stressful but i finally managed to finish it in time ^________^

i made marshmallow fondant (see below for recipe) instead of the usual one so its yummier to eat =P it was sooooooooo messy to work with at the start!!!!! but the results of texture&taste were awesome.

gotta thank my sis for helping me too and doin those delicate little nails *muah* :]

i was superrrrr nervous when i bought the cake to the restaurant .. kept thinking "OMG .. its gonna taste bad" "OMG they arent gonna think its pretty" etcetc .. but everyone was so kind and gave me great motivation to do another cake next time. hearing compliments for your hard work is really really rewarding ^_______^

the cake was so moist&soft. it was soooo yummy again. same cake i made for my dad's *its a winnerrrrrrrr* =D

i give you my first MM fondant cake *drum-roll*:

the makinggggg process



the bottom half was literally jus plain blue .. i finished up and went to bed about 12am .. couldnt sleep - keot rolling around thinking of the cake -_______- SO guess what i did?? i woke up .. and started to add those pockets and made the little pencil&eraser and ended up goin back to sleep about 3am. got up at 530am for school YAY FUNFUN =( ahahaha! but thank god i thought of it, looked so much more better! ;]

Marshmallow Fondant LVL ☆

you will need:
  • 500g of white marshmallows
  • 2 tbs of water
  • 1kg of icing sugar
  • crisco
how to make this messy thing??
  • first put all the marshmallow into a big bowl
  • evenly distribute the water on the marshmallows
  • pop them in the microwave for abt 30secs, take out and give it a good mix again
  • put it back into the microwave for about another 30-40secs till the marshmallows have melted
  • mix it till it forms a smooth mixture
  • next grease a big working-bench with crisco (trust me! u need heaps or it will stick to the table!!!! make sure u grease enough of the working space u need)
  • pour 500g of icing sugar into the marshmallow mixture, give it a good stir. (doesnt matter if its not enough icing sugar in it, u just want to make it easier to work with when tour kneading it next)
  • next, sprinkle some icing sugar on the bench, put all the mixture onto your working bench. grease your hands with crisco.
  • pour some of the icing sugar on the marshmallow and start to knead everything in.
  • repeat this until u form a nice soft looking dough.
  • wrap up the fondant tightly and place it in a freezer bag with no air.
  • chill for 24hrs
*when you take it out of the fridge, it will be stiff, jus give it a good 10-20secs in the microwave till its soft to use. if it gets too soft, jus add some icing sugar to it! u can now add colour gels to it and have fun playing!! =P*

happy birthday to daddy :]


sooooooo i got straight up from a little hang over .. and had to get bakingggg!!! was doing things for 4hrs non-stop! who would think sucha cake needed so much time! -____- but for the best results, time is worth it ;] HEEHEE!!!

ive recently been trying to make my own version of recipes, this is one ive come up with and made 2 birthday cakes with - and its been A GREAT HIT!!!!!!! (thank god!) =P i even love to eat it. its sooooooooo rich in chocolate. so so tasty and its NOT SWEET woohooo!!! i will have to think of a name for this ..

its a swiss dark chocolate devils cake with chocolate cream one layer and the layer with chocolate ganache - then poured over the top as well. :] mmmmmm~~~ that little piece was for my uncle's birthday hahahaha =P


i used 'madagascar' swiss dark chocolate (its really good! thank the lady at the shop for introducing it to me) and the dutch cocoa is really nice&tasty :]

these were my little test cakes to see which recipe i'd go with.. the winner? THE RIGHT ONE!!! :] the left one was nice too - my aunty loved it. its a chocolate mousse cake, maybe i'll make it for the next birthday coming up! ;]

school updates*

just some of the recent yummies ive made during the past few weeks!! sorry for the slow updateeeeeeeeeeeeees!!! =P

fruit tarts filled with creme patisserie



creme patissiere LVL:
  • 500ml milk
  • 1/2 vanilla bean (split & scraped) or vanilla extract
  • 50g castor sugar
  • 60g yolks (of 3eggs)
  • 50g cornflour
method:
  • bring milk 450ml milk, 50g of sugar and vanilla to boil
  • meanwhile, whisk yolks with remaining 50g sugar, add remaining milk and cornflour - till pale yellow
  • carefully pour small amounts of boiled milk into yolk paste whilst whisking.
  • pour ingredients back into saucepan and cook on medium heat till thickens. keep stirring.
  • rest & chill till required. if it thickens up, jus beat it up till its smooth again!

mini devil cupcakes with cream cheese frosting

LVL: ☆☆☆☆

all i can say is: YUMMMMMMMMMMM!!!! ^_______^ i loved these. one of the cupcakes out of all the ones ive made, this is the one i actually love to eat :] :] i was really happy with the results. they were a great hit when i bought them to a cook-off dinner. i was really happy to see everyone enjoying them ^______^

these turned out so cute & miniture!! reminded me of mushrooms hahaha

texture was very soft, not too sweet. thats why i made the cream-cheese frosting to even it out. worked out perfect!

i substituted castor with brown, added less butter too, plus small in size = guilt-free ;]
oo and i gotta thank mrs green&coles for supplying me with the icing flowers .. hahahha i should really be starting to make them myself!! **NEXT GOAL**
