asian sausage bun - i ♥ bread



YEAST. i use to hate it. hate making yeast goods bec its so time consuming!!!! but .. ive changed my mind .. im becoming pretty obsessed with making yeast goods lately .. hahaha im sucha hypocryt! =P

sooooooooo ive been searching (and will still be) for the PERFECT recipe for those ultra soft & delicate asian breads. i purchased a bread-making book in malaysia, so i thought lets give it a go! the result was quite fascinating! im really happy with it! :] the bread is super softttttt!!!! well thanks to the bread-improver (which took me AGES. AGES to find.) hahahha -_______-"so

shinchan oreo cake!




happy birthday mit! :]

got a cake order from a lovely girl called hannah to make a shin-chan bday cake :]
hope you liked it! was a small little cake for four people :]
so i decided to make this oreo dark chocolate cake recipe i found which i loved!!

oreo dark chocolate cake LVL☆☆

ingredients:
  • 2 cups castor sugar
  • 1 34 cups plain flour
  • 34 dark cocoa powder
  • 1 12 tsp baking soda
  • 1 12 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 12 cup vege oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 10-15 oreos (twisted and seperated)
  • 15 oreos (chopped and crumbed)

icing: ( i didnt end up making this part. but give it a go!)

  • 12 cup butter
  • 23 cup cocoa powder
  • 3 cups powdered sugar
  • 13 cup milk
  • 1 tsp vanilla extract

filling: (i manipulated this as i made extra cream. so just vary it yourself!)

  • 13 cup heavy cream
  • 2 tsp icing sugar
  • dash of vanilla extract
  • 18 cup oreo crumbs (i added heaps more! heehee!!!)

method:

  • sift all dry ingredients together inclucing the sugar (i didnt do it this way)
  • add eggs, milk, oil, vanilla for 2minutes
  • stir in the boiling water (this will thin out the batter)
  • pour into cake tins and bake @175-degrees till the center is clean when poked with skwer!

frosting:

  • stir melted butter into cocoa till smooth
  • alternately add icing sugar & milk till the consistency you desire
    (add some more milk if you want it extra spreadable)
  • add some vanilla extract too

filling:

  • whip cream, sugar & vanilla extract till about medium peak
  • fold in oreo cookie crumbs (bec you have the cream at medium peak, its safer to whisk it up abit with the crumbs prior to use) ;]
to assemble:
  • pour some cake batter into tin
  • pop in some oreos (the side with the cream)
  • pour cake batter in again
  • bake!

greentea & red bean mousse chocolate cake

i got a lovely cake book for my birthday and i saw this recipe. i thought: 'greentea&red bean' such an asian taste - the oldies would like it - lets do that! heehee!

turn out to be quite yummy!!!~ i was having second thoughts but NICE! wasnt too sweet though! i think if i make it again next time i'll add alittle more sugar just to make it perfect!! i wanted a soft asian-like sponge, so i decided to make a chocolate chiffon cake. it was delicious! still keeps its softness and texture even after been in the fridge over night =D
and the recipe has abit too much gelatine suggested so i think i'll lessen it to make the mousse more cream-like. once i perfect it i'll post up a recipe :]

having to wake up after a big night and go straight to designing .. i couldn't think of anything so i did a similar design to my last cheesecake~ heehee!!


i'll post up the original recipe and you can give it a go :] i doubled my recipe size. bec it really isnt enough originally as u can tell. u could even triple it! but watch out for the gelatine and sugar.

ingredients:
  • you'll need to make some sort of chocolate sponge or whatever you wish

    italian meringue
  • 10g castor sugar
  • 3g water
  • 15g egg white

    greentea mousse
  • 6g gelatine powder (be careful. if u double it, i think you could go 8-9g. not sure yet!)
  • 20g castor sugar (would need a touch more!)
  • 10g greentea powder
  • 3drops green tea essence
  • 65g fresh milk
  • 200g thick cream
  • 120g red bean (cooked till tender)
method:
  • line your cake tin with some acetate
  • bring 10g castor sugar + water to form syrup
  • whisk the 15g egg whites till fluffy
  • add slightly cooled syrup into egg whites. continue whiskin till cool down
  • whip the cream
  • combine gelatine + milk + greentea essence over bainmarie till dissovled.
  • combine italian meringue and whipped cream + greentea powder
  • then pour in the gelatine milk mix
assemble:
  • pour half of the green tea mousse into cake ring.
  • sprinke some redbean
  • put a layer of chocolate sponge
  • mousse
  • redbean
  • sponge
  • mousse
  • smoothen the surface and chill in frige till set then SERVE~

this was a fruit cake covered with marzipan and royal icing for school :]

i panicked what design to do. so this is what i thought of in the heat of the moment XD time wasnt on my side so things r not too perfect ok! hahaha

happy 21st birthday to vange!


happy 21st birthday to vangeeeeeee!!

my biggest project was achieved finally! so happy the cake was a great success~ *wipes sweat* hahaha! this cake took quite a long time, but managed to get it done :]

wouldnt have done this without the help of my great sister!!!!!!!! thank you! she's a flower expert now :] :]


i made belgain dark chocolate & orange marble bundt cake inside. the sour cream kept the cake nice&moist. very happy with the result and taste!! :]
