dense chocolate cake + oreo cheesecake


my sister's boyfriend loves chocolate cake, so lets bake him one! hahaha =D i tried this recipe .. but i dont knw why my cake turned out abit on the dry side. it was lacking moisture. but it still tasted FANTASTIC. maybe it was the fact i used ordinary cabury dark chocolate instead of cooking chocolate? does that make a difference? =| well everything tasted wonderful after its been re-heated abit. yumyum ^_______^

had a big farewell bbq for a lovely friend jenny. we'll surely miss you =( just quickly made an oreo cheesecake and sliced them into mini-bite-sizes :] its a great recipe, i found it in one of my asian cookbooks! i just re-read the recipe while i was typing .. i realised WHY my cake turned out abit softer than expected .. I DIDNT DO THE boiling gelatine & milk part -_____- hahahaha!!! see thats why ppl say READ THE RECIPES CAREFULLY!!! XD

oreo cheese cake LVL:

oreo biscuit crust:

120g oreo biscuits, removed filling and crushed
70g unsalted butter
filling:

250g cream cheese, softened
125g castor sugar
2 pieces oreo biscuit (no filling, crushed - u can really put in as much as you want, the more the yummier!)
150g dairy whipping cream
1 1/2 tbsp gelatine powder
80ml full cream milk
method:
  • OREO BISCUIT CRUST - combine all ingredients and press in cake tin. chill in fridge until firm.
  • FILLING - beat cream cheese + castor sugar until smooth.
  • add remaining ingredients and mix well
  • combine gelatine powder, full cream milk and double boil until dissolved.
  • pour into mixture and mix well.
  • spread onto crust
  • chill in the fridge for 3 hours before serving :]

greentea tiramisu sponge cake ♥

ive always been a greentea lover|fan ^_______^ so i thought why not make something greentea amanda! i was browsing through alot of different recipes, but this one from House Of Annie sounded easy & delicious. he gives great step-by-steps - check it out! so i gave it a try! its really oishiiiiiiiii~ :] :] thanks for the great recipe!

i sorta wanted to make a layered spongecake one instead of using the lady sponge fingers! everyone enjoyed it thank god! =D heehee!!

these are some creme brulee with caramelised banana slices :] im not a sweets-lover, its funny because i love to make desserts .. yet i dont eat them? hahahha -_______- but this was the first time i tasted creme brulee, its actually pretty nice! could be veryvery addictiveeeeeeeeee. one spoonful? i dont think it will be enough for anyone! hahahah!!
i enjoyed making the decorations. although it was so annoying everytime the caramel started to harden up again!

recipe: makes 10 portions

500ml milk
500ml cream
1 vanilla pod, split
5 eggs
5 egg yolks
120g castor sugar
100ml milk

method:
  • heat milk, cream, vanilla pod to just below boiling
  • in a bowl, beat together eggs, egg yolks + sugar
  • add hot milk, cream mixture into eggs + mix well
  • strain through fine strainer + pour into souffle|ramekins dishes
  • place dishes in water bath and cook in oven at 150ÂșC for 45-60mins (really just check up on them, you'll know they are rdy when you sort of shake the dishes and the creme is a little wobbly)
  • remove brulee and chill (you can serve them hot or cold)
  • dust heavily with sugar, use a blow torch or salamander to caramelised the top.

these little buggers were pretty annoying! hahaha!! some were successful, some werent so successful. you'd think .. wouldnt this be sucha easy one to make? could have been i guess, but first attempt at it wasnt so perfect =P

id advise anyone first attempters out there to get everything ready before you start this. MIS EN PLACE ;] so whip your egg white & sugar first, then make your mixture so they are ready to be combined all together :]

happy valentines day ♥

a little gift from a special friend :] love it! my sister literally saw it and thought 'wow did u bake this tdy?' hahahaha!! =P its so cute! im sure it will come in great handy!

so its yet another valentines day. had the best valentines this yr, spent it with friends (yes single ones) hahahha! but was great :] time really flies. i jus remembr it being valentines the same time last yr, and look! easter is creeping near too .. o god!

i got home early from class, so i thought i'd do alittle baking for valentines. i wasnt sure what i'd want to bake, so i thought of red velvet cakes. they are french for chocolate cake? thats what ive read? although my cakes didnt turn out RED in colour, because i alrdy put quite a bit of red food colouring .. didnt want to use anymore - so they still look like chocolate cakes now hahaha -______-"

tiramisu; but not for valentines!

soooooooooooo its been one week since ive started my new course! its pretty exciting still! stage one we're jus learning basic cutting skills and stuff. not really 'baking' yet =( but ive made alot of new friends which is veryvery fun! everyones from different backgrounds so we're all learning off each other :]

tdy i wanna wish vinna a happy 19th birthday ^________^ ♥ she's my new friend frm school! so i thought why not make her a bday cake!!!! i was contemplating on making the regular tiramisu or strawberry tiramisu. and since i didnt have enough strawberries on me, i decided to jus make the traditional tiramisu cake - but an eggless one!









scared of failure??? NO WORRIES. trust me, this is one of the easiest cakes to make. no baking required ;]

eggless tiramisu LVL: ☆

what you need:
  • 250grams macarpone cheese
  • 400grams lady finger sponge bisuits (or as much as you require)
  • 250grams whipped cream or thick cream
  • 7 tbs castor sugar
  • 1 to 2 tsp vanilla essence
  • 2 tbs (or more if you want, i usually put more!) tia maria or other
for dipping the biscuits:
  • 4 tsp coffee
  • 1 1/2cup hot water
  • 2-3 tsp castor sugar
method:
  • whip the cream, add the sugar
  • once its gone thick, fold in the mascarpone cheese
  • add the vanilla essence&liquer
  • (you can add cocoa or anything if you want more taste)
  • leave aside
  • soak biscuits or sprinkle the coffee onto them
  • allign them in the shape you want
  • filled the first layer with the cream
  • then make another layer with the soaked biscuits
  • and top it up with the remaining cream
  • garnish to your desire :]

THE BEGINNING 020209 :]

first of all: HAPPY CHINESE NEW YEARRRRRR!!!!!!! ^___________^
i admit. ive been lazy. didnt even end up baking my new year almond cookies =( hahahah!!! but i have very exciting news to share!! im starting my patisserie course♥ next week and im superrrrrrrrrrrr happy!!!! i cant wait!!!!! ^__________^ hopfeully i'll learn to bake more yummier sweet&treats for everyone :] im really excited!!

STATUS: AMATEUR. hahahha!! -_______- hopefully this status shall change within a year =P

heres my lovely uniform!! the weather has been 40degrees in melb .. not good .. hope it wont be too hot wearing these in the kitchen man =| AND my TOOL KIT!!!!!!! ITS SUPER AWESOME. so pretty. when i jus unrolled it and flipped it open .. omg .. my heart was pounding HAHAHA!!! ♥


banana cake: the only recipe i swear by. ive baked this recipe for many years now, never fails me. i'll never replace it. its the best by far!!! its sooooo moist inside & the taste is JUST SUPERB.

outting treats!

its been quite a while now since ive had time to start baking again!
planned a little trip to venus bay with some friends and was given the job to bake, so i thought WHAT SHOULD I MAKE? =O hahaha!!

first of all i made this passionfruit sponge cake, it had lemon curd filling topped with whipped cream and touches of strawberrys. i made an awful mistake of not makin my own whipped cream but buying those ones you get in supermarkets .. the whipped cream literally melted so quickly, it destroyed the sponge cake =( so didnt end up bringing that to the trip. i loveddddd the passionfruit frosting though YUMYUM! :]~



so i decided to make these orange cupcakes (with the poppyseeds bec i didnt have any and couldnt get any in time) i jus had to make do without them! heehee!! they turned out nice&scrumptious :] but due to the cupcake been made by plain flour, im thinking thats the reason why the texture of it harden abit?
i topped them up with some light orange icing & decorated them: one for everyone ^_____^


finally i made some coated strawberries dipped in chocolate :]
