baked blueberry cheesecake


baked blueberry cheesecake LVL☆

this is another wonderful recipe for keepers! great feedback! first you'd have to make th sweet shortcrust dough for the base :] enjoy this recipe guys!!

ingredients:
  • 100g unsalted butter
  • 50g castor sugar
  • 25g egg (1|2 egg)
  • 150g plain flour
  • pinch of salt
method:
  • cream butter and sugar
  • add egg till absorbed
  • fold in the dry ingredients till its a sticky dough
  • wrap it tightly and put to chill till use.
  • before you make the cheesecake, you'll have to cut out your shortcrust base and blind bake it in the oven till its slightly golden.

ingredients:
  • 250g cream cheese
  • 1 whole zest of a lemon
  • 140g castor sugar
  • 200g ricotta cheese
  • 150g eggs (3)
  • 200g blueberries (fresh or frozen)

method:
  • beat cream cheese, lemon zest and sugar till smooth
  • add ricotta cheese and combine to mixture
  • add eggs one at a time till they are absorbed
  • pour mixture into blind baked pastry
  • sprinkle blueberries over surface
  • bake 165degrees for 40-60mins

    blind baking is when you want to hold the crust in its shape. so put another tin or u can make a little bag filled with beans&seeds so u can use it to place onto of the shortcrust whilst u bake it.

    u want to bake it until its sorta lightly coloured. once its done, pour the cheese filling and re-bake.

    this is why when u blind bake, u dont want to over-cook the crust bec you will still need to bake it along with the cheese filling - so it will become a nice light brown colour instead of a black burnt crust =P
