keroro&frds birthday cake!
happy birthday alison!! ^________^
wow. another two days of hard-work XD didnt think id end up making it - as my grandpa passed away .. and im going to be leaving tmr night to malaysia for a month~
but surprise surprise i still had time to make it bec my sister had her exam tdy and then we will both be off to meet my parents& little sister who flew back first. rest in peace my dear sweet grandpa*
so? wondering who keroro is? i did too! i never even seen or knew about this cartoon character, till i research some pictures XD so hopefully i made them look sorta similiar =P hahaha!!
its a 4 layer cake consisting of genoise, chocolate genoise filled with greentea mascapone mousse~ ^______^

*WIPES SWEAT* had to cancel some orders due to this sudden flight back. and wont be ale to attend class for the last 2weeks =(

baked blueberry cheesecake
baked blueberry cheesecake LVL☆☆
this is another wonderful recipe for keepers! great feedback! first you'd have to make th sweet shortcrust dough for the base :] enjoy this recipe guys!!
ingredients:
- 100g unsalted butter
- 50g castor sugar
- 25g egg (1|2 egg)
- 150g plain flour
- pinch of salt
- cream butter and sugar
- add egg till absorbed
- fold in the dry ingredients till its a sticky dough
- wrap it tightly and put to chill till use.
- before you make the cheesecake, you'll have to cut out your shortcrust base and blind bake it in the oven till its slightly golden.

ingredients:
- 250g cream cheese
- 1 whole zest of a lemon
- 140g castor sugar
- 200g ricotta cheese
- 150g eggs (3)
- 200g blueberries (fresh or frozen)
method:
- beat cream cheese, lemon zest and sugar till smooth
- add ricotta cheese and combine to mixture
- add eggs one at a time till they are absorbed
- pour mixture into blind baked pastry
- sprinkle blueberries over surface
- bake 165degrees for 40-60mins

humungo tiramisu!
happy birthday stanley! :]
i attempted to try the egg version of tiramisu. which failed. my mascarpone cheese was retarded. i realised now that even before i used them, they were alrdy split .. something musta been wrong with that cheese. it wasnt smooth, it was lumpy. (unless i bought the wrong cheese?) so it couldnt have been bec of the egg then -_______-
so i woke up extra early to purchase some new cheese and it was so much better. it was the real smooth one!! hahaha so here was the 45x20cm cake! it was finished in a flash! but i wasnt too happy with the sponge, it was abit dry for me. i should have soaked more coffee into it! but overall, not too sweet - jus the way i like it ;]

STEP ONE
flourless chocolate sponge discs
ingredients:
- 240g egg white
- 250g castor sugar
- 160g egg yolk (8)
- 70g cocoa powder
- whisk egg white till volume gradually adding sugar
- add yolks one at a time
- fold cocoa powder in
- transfer to piping bag and pipe round discs
- bake! (you'll prob need about 3 discs, make 4 to be safe!)

chocolate + mascarpone mousse
ingredients:
- 200g dark chocolate
- 4g gelatine leaves
- 130g sugar
- 110ml water
- 80g yolk (4)
- 150g mascarpone cheese
- 250ml cream
- melt chocolate
- soak gelatine in cold water
- boil sugar + water till 120degrees
- pour sugar syrup into whisking yolks
- dissolve and drain gelatine
- add to yolks
- fold in mascarpone cheese
- manually whisk in melted chocolate
- fold in whipped cream
STEP THREE
cinnamon bavarois
ingredients:
- 10g gelatine
- 2 cinnamon stick
- 180ml milk
- 60g yolk (2)
- 50g castor sugar
- 300ml cream
- soak gelatine
- crush cinnamon stick + add to milk - bring to boil
- whisk yolks + sugar till pale
- strain boiled milk onto yolk + combine
- return to boil till thick (do not exceed 82degrees)
- add gelatine till dissolved
- fold in whipped cream
TO ASSEMBLE
- in a cake tin, line it with acetate
- place a choc disc
- line some poached pears
- cover with choc-cheese mousse
- put another choc disc on top
- cover with choc-cheese mousse
- another disc on top
- put into fridge and make the cinnamon bavarois
- when thats done, take the cake out of the fridge
- pour the bavarois on top
- and chill the cake till set!

orange cake LVL☆
ingredients:
- 125g orange puree (one whole orange)
- 70g unsalted butter (melted & cooled)
- 80g egg yolk (4)
- 50g castor sugar
- 150g egg white (5)
- 125g blanched almond meal
- 20g besan flour
- 50g castor sugar
- prepare orange puree: boil whole orange for 1hr - cool and puree it.
- melt butter and stir in orange puree
- whisk yolks + orange-butter mix
- whisk egg whites + sugar
- combine almond meal and besan flour
- fold 1|3 at a time egg whites into the other mixture and then 1|3 dry - continue till combined
- bake 170degrees for 45-55mins!
mango cheesecake LVL☆☆☆
this is a fantastic recipe to try!! give it a go! what you'll need to make first is the
shortcrust disc for the bottom :]
ingredients:
- 200g unsalted butter
- 100g castor sugar
- 50g egg
- 300g plain flour
- pinch of salt
- cream butter + sugar
- add egg till absorbed
- fold in flour + salt
- it should end up like a sticky dough, wrap it up tightly and pop it in the fridge till use.
mango cheesecake
ingredients:
- 8g gelatine leaves
- 100g castor sugar
- 80ml water
- 40g egg (2)
- 50g egg (1)
- 50g castor sugar
- 250g cream cheese
- 200g mango puree
- 300g whipped cream
- soak gelatine in cold water
- 100g sugar + water - bring to boil 120degrees
- whisk egg yolk, egg + 50g sugar
- slowly pour sugar syrup into egg mix
- pour gelatine into egg mix
- beat cream cheese till smooth
- slowly add to egg mix
- fold mango puree in
- fold cream in carefully (do not over do it or the cream will split!)
- pop into fridge till set! may take few hours! its worth it!! :]
