fruit tarts filled with creme patisserie
creme patissiere LVL: ☆☆☆☆☆
- 500ml milk
- 1/2 vanilla bean (split & scraped) or vanilla extract
- 50g castor sugar
- 60g yolks (of 3eggs)
- 50g cornflour
- bring milk 450ml milk, 50g of sugar and vanilla to boil
- meanwhile, whisk yolks with remaining 50g sugar, add remaining milk and cornflour - till pale yellow
- carefully pour small amounts of boiled milk into yolk paste whilst whisking.
- pour ingredients back into saucepan and cook on medium heat till thickens. keep stirring.
- rest & chill till required. if it thickens up, jus beat it up till its smooth again!
