first wedding cake :]
my first order for a wedding cake (thanks to my lovely vinna) :] wondered what design to do? a nice&simple one .. although i drew many designs out, i ended doing one not even on the papers! hahaha that always happens to me .. i dont think i can plan much, i do what comes to mind in the heat of the moment~ heehee!! XD this is a chocolate&coffee densecake with mocha cream and topped with sponge :]
found these tiers frm wilton* they are so cool! u can literally fill anything inside. so pretty!

BABY MARIO + BLUE YOSHI CAKE
few months ago, i got an order to make a mario&yoshi cake. this has been my biggest project yet! it was a difficult one i admit!!!! watta charming young lad planning a bday cake for his lovely girlfriend's special 21st bday :] its so sweet :]
note to carmen: after all this time .. i had no idea it was you who follows my blog! and it was you i was making this cake for!!!!! =O hahahha!! wow. happy birthday!! :]

pizza balls
we had an assignment for school. got given a list of ingredients: USE THEM AND MAKE SOMETHING! so......... ok. after some research, i decided so make these yummyyyyyy pizza balls!!! mmmmmmmm! :]
give em a go! def worth a try! ^_________^
- PIZZA DOUGH
· 1 cup warm water
· 1 ½ tbs sugar
· 10g active dry yeast
· 1 tsp salt
· 3 cups plain flour2 tbs olive oil (to drizzle)
Method:
· Dissolve yeast in warm water
· Stir in sugar to dissolve
· Stir in salt
· allow it to rest till it starts to foam ** see pic below**
· Add 1 ½ cups flour into yeast mixture
· Gradually add more flour till mixture comes away from mixer bowl to form a smooth ball dough
· Allow dough to prove for 30mins, double in size.
· Scale and divide, roll into balls of desired size.
· Put filling into each ball
· Set them on a tray or round tin and allow them to proveBake in oven @ 400-425⁰C till light brown on the top. 8-10mins

- FILLING
Ingredients:
· Salt + pepper
· 1 cup onions, chopped + diced
· 1 cup button mushrooms
· 1 chicken thigh fillet, chopped + diced
· 1 clove of garlic, chopped finely
· 1 cup sharp cheddar cheese
· ½ cup mozzarella cheese
· ½ cup thin pepperoni slices, cut small
· 1 cup of fresh spinach
method:
1.Wash and slice chicken into 1cmx1cm cubes
2.Marinate the chicken with a drizzle of olive oil, pinch of salt and pepper and pinch of oregano
3.Incorporate all the ingredients together.
4.Cover the chicken and leave to marinate for 30minutes.
Prepare vegetables
-1cmx1cm button mushrooms, mozzarella + cheddar cheeses
-Dice onions, tomatoes, garlic, parsley finely

- DIPPING SAUCE
Ingredients:
TOMATO SALSA
· 180ml tomato paste
· 180ml water
· ½ cup of fresh tomato, chopped + diced
· 3 tbs garlic bread seasoning
· 1 tbsp sugar
· ¾ tsp onion powder
· ¼ tsp red pepper flakes (optional)
RANCH DRESSING
· ranch
· ¾ cup mayo
· ¾ cup milk

japonaise + linzer torte
been so hectic the past few weeks. im sick, getting 3hrs sleep and it just hasnt stopped!!!! i feel sooooooo relaxed atm jus having time to sit down and update my blog :]
heres a japonaise torte. which is basically japonaise biscuit with hazelnut praline buttercream once again :]
and this is the linzer torte. its another hazelnutty-cinnamon flavoured dough with raspberry jam. its overly too sweet for me honestly =

hazelnut praline torte
all i can say is: YUMMMMMMMMMMMMMM ^_______^
as a hazelnut fan, this torte is fully packed with it!! love it! and i dont eat sweets!!! =D give it a go guys!!~
made these in my catchup class for stagetwo (sigh i cant wait till holidays .. 530am daily is doin my head in!!!) T________T
hazelnut praline torte LVL☆☆☆☆
hazelnut sponge cake
ingredients:
- 100g plain flour
- 200g hazelnut meal
- 120g egg yolk (6)
- 1 egg
- 130g caster sugar
- 180g egg white (6)
- 50g sugar (extra)
method:
- Sieve flour over hazelnut meal
- Whisk yolks, egg + sugar till thick+pale
- Whisk egg whites+sugar till thick meringue base
(add the sugar once the egg whites are in their foamy stage) - Fold 1/3 whites into yolk mixture
- Fold remaining whites alternatively with dry into the yolk mixture
- Pour into buttered + floured tins
- Bake @ 180⁰C – 30mins

italian meringue buttercream + hazelnut praline
ingredients:
- 200g sugar
- 120ml water
- 120g egg white (4)
- 40g caster sugar
- 400g unsalted butter
- 30g hazelnut paste (you can use nutella if you cant find any)
- 150g hazelnut praline
method:
- Boil sugar + water till soft ball stage (121degrees)
(once you start boiling this, start whisking the egg whites) - Whisk egg whites till firm
- Slowly add sugar syrup into whiskin eggs
- Continue whisking till cool
- Gradually add soften butter till combined.
- mix in hazelnut paste
- mix in hazelnut praline

hazelnut praline
ingredients:
- 250g sugar
- 180ml water
- 30g liquid glucose
- 150g roasted hazelnuts
method:
- roast hazelnuts (if not roasted - and peel skin off)
- Sugar + water bring to boil
- Add liquid glucose
- Cook till golden colour
(tip: do not let it become too brown, as sugar continues to cook when off the stove! ;]) - Pour on top of hazelnuts
- Cool then shatter in food processor.

TO ASSEMBLE
- cut the sponge into 3layers
- one layer sponge; one layer buttercream
second layer sponge; second layer buttercream
third layer sponge; finish off with buttercream all around cake - press firmly hazelnut praline on the sides of the cake
- decorate as u wish! :]

happy father's day daddy :]
made a little topper for my daddy's celebration cupcake :] nothing so big! heehee! didnt want to make a cake i had in mind - as the buffet we went to usually has CAKE they provide. but guess what? they took it off the buffet menu GRR!! hahahaha but hey was super stuff with all the food i dont think there would even be room for any cake XD
havent had much time to update guys! so sorry! i'll be baking for sure this week so stay tuned :]
